Thanks to the changes in farming practices, Luis Carlos Oliveira has produced something seriously special. Luis Carlos Oliveira’s coffee is a standout coffee from the region of Ilicinea. Its first cupping delivered profound walnut characteristics, balanced beautifully with a delicate orange undertone. This is reinforced by a smooth orange-like acidity, and a syrupy and rounded mouthfeel. Its sweetness is reminiscent of baked fruits.
Delicious, and processed using the Natural method. This method is easy to understand, but hard to achieve great results with. The cherries are laid out on a drying patio immediately after picking. Then, over 30 days, they are allowed to dry to a humidity where the coffee can be stored without the worry of fermentation or mould. Having the cherry flesh left on allows the bean to develop the flavour further.
