“This coffee really stood out for it’s walnut characteristic on the cupping table, combined with an orange undertone which is reinforced in the smooth acidity. The mouthfeel is syrupy and round and the sweetness is like dried fruit.
For this year’s Brazilian harvest, we started working with a slew of new farms near Ilicinea, Minas Gerais, in the Southeast of Brazil. The region’s mountains are a perfect mix of sunny and ventilated, meaning the overall quality of coffees is very high.
These new farms are situated higher than the rest of the country. This higher location means the temperature of the farm is reduced, while sunshine hours remain high, allowing for a slower, more uniform ripening of the cherries. With stone-covered soil, this usually leads to individual and consistent taste and flavour profiles.
Luis Carlos Oliveira’s coffee was a standout coffee from the region of Ilicinea. Its first cupping delivered profound walnut characteristics combined with a delicate orange undertone. This was reinforced by a smooth acidity, and a syrupy and rounded mouthfeel. Its sweetness is reminiscent of dried fruits.
