This coffee is coating and creamy - a great representation of a Brazilian specialty coffee, with a very mild and creamy, but high quality, acidity. This works fantastically alongside more chocolate-driven flavour notes, with notes of chocolate pralines fill this comforting cup of coffee.
Das Furnas is processed using the pulped natural method. This is very similar to the washed method, however, after the cherries are de-pulped, rather than being fermented, they go straight onto drying beds where they’re left to dry in the sun.
Pulped natural coffees are characterised by their sweetness. They tend to have good cup clarity and a lower acidity - usually with ripe fruit and nutty flavours. Think plums, cherries, hazelnuts, almonds and cashews.
