This coffee is perfect for a single estate espresso. The bold dark chocolate characteristic reminds me of a classic Italian espresso but, when you explore further, the delicate peach characteristics deliver a complexity in both flavour and taste. This allows it to develop a rich sweetness and a silky mouthfeel.
This coffee is produced using the natural process, where coffee beans are left in the cherry to dry - causing more fermentation, which is hard to get right. To develop such delicious flavours in this way, without overpowering the coffee with its natural characteristics, shows a huge level of skill and understanding of processing by Télio and Tarlei.
