This coffee put me in mind of redcurrant and apple jam. The mouthfeel is syrupy, gelling deliciously with the fructose sweetness - and all undercut by a red apple-like acidity.
Having shared farm land inherited from his father for a number of years with his brother and sister, Jose Ramon Collazos bought Buenos Aires in 1989. At the time, the space was barren with a house made from plants and other natural materials, over the 29 years he has been farming the land he has made his home at the top of the farm as well as adding lodging for seasonal workers, over the past 4 years that Pact have been buying his coffee he has used the premium price he receives to increase the quality of this accommodation even further.
